Fa\u00e7onner en petites boulettes d'environ 2 cm (3\/4 po) de diam\u00e8tre.<\/li>\n<li>Dans une grande casserole, chauffer l'huile \u00e0 feu moyen-vif. Faire revenir les boulettes pendant 5 minutes ou jusqu'\u00e0 ce que la viande soit dor\u00e9e. Proc\u00e9der en plusieurs fois si n\u00e9cessaire.<\/li>\n<li>Ajouter l'ail, le m\u00e9lange de l\u00e9gumes, le bouillon de poulet, les feuilles de laurier et le persil. Porter \u00e0 \u00e9bullition \u00e0 feu \u00e9lev\u00e9, r\u00e9duire le feu \u00e0 moyen-doux et laisser mijoter pendant 15 minutes. Ajouter l'orzo et la roquette puis poursuivre la cuisson pendant 8 minutes.<\/li>\n<li>Poivrer au go\u00fbt. Transf\u00e9rer dans 4 bols de service. Garnir g\u00e9n\u00e9reusement de feuilles de basilic et de quelques copeaux de parmesan. Shape mixture into small meatballs, about 2 cm (3\/4 inch) in diameter.<\/li>\r\n \t<li>In a large saucepan, heat oil over medium-high heat. Cook meatballs for 5 minutes, or until browned, working in batches if need be. Add garlic, vegetable blend, chicken broth, bay leaves and parsley.<\/li>\r\n \t<li>Bring to a boil over high heat and then reduce to medium-low and allow to simmer for 15 minutes. Add orzo and arugula, and continue cooking for 8 minutes. Season with pepper to taste.<\/li>\r\n \t<li>Divide soup among four serving bowls. Garnish generously with basil leaves and a few Parmesan shavings.
