Porter le m\u00e9lange \u00e0 \u00e9bullition, r\u00e9duire le feu et laisser mijoter \u00e0 d\u00e9couvert pendant environ deux heures ou jusqu'\u00e0 ce que le m\u00e9lange soit r\u00e9duit de moiti\u00e9. Passer le bouillon \u00e0 travers un tamis tapiss\u00e9 ou une passoire dans un grand bol et jeter les solides.<\/div>\n<\/li>\n<li id=\"wprm-recipe-26356-step-0-1\" class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">(Notez que le bouillon peut \u00eatre pr\u00e9par\u00e9 \u00e0 l'avance. Faites un puits au centre de la farine. Cassez les \u0153ufs dans le puits. Avec une fourchette, battre les \u0153ufs et l'eau environ 10 fois. Commencez doucement \u00e0 incorporer la farine et le sel du c\u00f4t\u00e9 du puits dans le m\u00e9lange d'\u0153ufs jusqu'\u00e0 ce qu'une p\u00e2te se forme et devienne collante et difficile \u00e0 travailler avec une fourchette. Avec un couteau ou une roulette \u00e0 p\u00e2tisserie, coupez 16 carr\u00e9s de 3\u2033 pour les peaux de wontons ou coupez des carr\u00e9s de 6 pouces pour les emballages de nems. Saupoudrer un peu de f\u00e9cule de ma\u00efs entre les carr\u00e9s, empiler et placer dans un sac plastique. Place 2 portions in a plastic bag. On a floured surface, roll out the third portion almost paper thin to a diameter of 12\" x 12\". With a knife or pastry wheel, cut 16 3\" squares for wontons skins or cut 6 inch squares for egg roll wrappers. Sprinkle a little cornstarch between the squares, stack and place in a plastic bag. Repeat with the remaining dough.<\/div><\/li>\r\n \t<li id=\"wprm-recipe-26356-step-1-3\" class=\"wprm-recipe-instruction\">\r\n<div class=\"wprm-recipe-instruction-text\">Makes 40 to 50 wonton skins or about 12 egg roll wrappers.<\/div><\/li>\r\n<\/ul>\r\n<h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold\">To Make the Wonton Filling:<\/h4>\r\n<ul class=\"wprm-recipe-instructions\">\r\n \t<li id=\"wprm-recipe-26356-step-2-0\" class=\"wprm-recipe-instruction\">\r\n<div class=\"wprm-recipe-instruction-text\">Chop the remaining chili finely. Combine in a small bowl with the pork, garlic, onion, finely chopped water chestnuts, fresh coriander, sesame oil, 2 teaspoons of the wine, 1 teaspoon of the soy sauce, half of the sugar and the remaining ginger.<\/div><\/li>\r\n \t<li id=\"wprm-recipe-26356-step-2-1\" class=\"wprm-recipe-instruction\">\r\n<div class=\"wprm-recipe-instruction-text\">You can make the wontons in two ways:<\/div><\/li>\r\n \t<li id=\"wprm-recipe-26356-step-2-2\" class=\"wprm-recipe-instruction\">\r\n<div class=\"wprm-recipe-instruction-text\">1. Fill the center of the wrapper with 2 teaspoons to 1 tablespoon of the pork filling, fold it over and press down the edges to seal.
