Taco duo

- Meat Tacos
- 15 ml of Olive oil
- 1 Chopped Onion
- 1 Cut in thin strips Sweet pepper
- 225 g of Lean Ground Beef
- 1 pack of Store-bought Taco seasoning

- Fish Tacos
- 5 ml of Olive oil
- 1 Cut in thin strips Red Onion
- 1 Cut in thin strips of Sweet pepper
- 225 g Sole fillets or Haddock
- To taste - Pepper & Salt

- Fillings
- 4 Tortillas
- 4 Taco Shells
- 250 ml of Grated Cheddar or Monterey Jack
- 250 ml of Shredded Lettuce
- 1 Cubed Avocado
- 1 Cubed Mango
- 3 Cubed Tomatoes
- 2 Limes cut in wedges
- 1 Chopped Hot pepper (optional)
- To taste - Sour cream
- To taste - Fresh Cilantro
Instructions
1- Heat oil in a skillet and cook onion and sweet pepper for 3 to 4 minutes to soften.
2- Add ground meat and cook until no longer pinkish.
3- Stir in taco seasoning. Add water as needed and cook until completely evaporated. Set aside.
4- Heat oil in a skillet and cook onion and sweet pepper for 3 to 4 minutes to soften.
5- Add fish fillets and cook for about 2 minutes per side, depending on thickness, until fish is opaque and flakes easily with a fork. Season with salt and pepper.
6- Flake fish with a fork in a bowl. Set aside.
7- Preheat oven to 200°C (400°F).
8- Wrap tortillas in aluminum foil and place taco shells upside down on a baking sheet. Heat in oven for 3 to 5 minutes.
9- Fill two tortillas and two taco shells with meat mixture and stuff remaining four with fish filling, or let guests decide on filling.
10- Set out garnishes on table and let guests help themselves.
