Slow Cooker Beef Roast
Ingredients
- 1 beef roast (approximately 3 lbs)
- 1 large onion, sliced
- 1 cup beef broth
- Salt and pepper to taste
- 4 cloves garlic, minced
- 1 tablespoon whole grain mustard
- 1 tablespoon Dijon mustard
- 1 teaspoon balsamic vinegar
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
Instructions
- Sear your roast on each side in a pan with a little oil.
- Place your piece of meat in the slow cooker.
- Place the onions at the bottom of the slow cooker.
- In a small bowl, mix the rest of the ingredients that will make the broth.
- Pour over the roast.
- Cook on HIGH for 2 hours or on LOW for 3 to 5 hours until the thermometer reads 130°F (46°C) for rare or 145°F (63°C) for medium-rare.
- Serve the broth as a sauce.
