Slow Cooker Beef Roast

Ingredients

  • 1 beef roast (approximately 3 lbs)
  • 1 large onion, sliced
  • 1 cup beef broth
  • Salt and pepper to taste
  • 4 cloves garlic, minced
  • 1 tablespoon whole grain mustard
  • 1 tablespoon Dijon mustard
  • 1 teaspoon balsamic vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme

Instructions

  1. Sear your roast on each side in a pan with a little oil.
  2. Place your piece of meat in the slow cooker.
  3. Place the onions at the bottom of the slow cooker.
  4. In a small bowl, mix the rest of the ingredients that will make the broth.
  5. Pour over the roast.
  6. Cook on HIGH for 2 hours or on LOW for 3 to 5 hours until the thermometer reads 130°F (46°C) for rare or 145°F (63°C) for medium-rare.
  7. Serve the broth as a sauce.
