Blueberry & Almond Sundaes

- 175 ml of Blueberry jam
- 60 ml of Apple juice
- Vanilla ice cream
- 60 ml of Sliced natural almonds
- 4 Wafer cookies
Instructions
- Whisk together blueberry jam and apple juice in a small bowl. Set aside.
- Place 2 small scoops of ice cream in each of 4 chilled bowls or decorative glasses.
- Spoon some blueberry sauce over each sundae and sprinkle with almonds. Garnish with mint sprig and wafer, and serve.
