Note:
You can replace the potatoes with sweet potato, short pasta or 125 mL (1/2 cup) long grain rice per portions.

- 15 ml Canola oil
- 450 g Ground beef
- Pepper and salt to taste
- 1 Large Onion diced
- 2 Clove garlic minced
- 15 ml Paprika
- 900 ml Beef broth
- 540 ml Diced tomatoes
- 1 Medium size potato, peeled and diced
- 4 Bay leaf
- 250 ml Green beans cutted in half
- 250 ml Broccoli florets
- 2 Carrots diced
- 1 Zucchini diced
- 5 ml Red wine vinegar
Instructions
- In a large saucepan over medium heat, heat oil and sauté beef, breaking it apart with a wooden spoon. Season with salt and pepper and cook 5 to 8 minutes until beef is browned.
- Add onion, garlic and paprika to beef and cook 5 minutes or until onion is softened.
- Add broth, tomatoes, potato cubes and bay leaves. Cover, bring to a gentle boil, and let simmer 8 to 10 minutes or until potato cubes are just tender.
- Add beans, broccoli, carrots, zucchini, and vinegar. Simmer another 10 minutes or until vegetables are tender. Remove bay leaves before serving.
